Ingredients:
- 500 grams of fresh okra
- 1 tsp ginger garlic paste
- 2 green chili, finely chopped
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin
- 1 tsp red chili chopped
- Salt to taste
- 1/3 cup oil
Instructions:
Wash the okra and pat them dry with a kitchen towel. Cut off the tops and tails of the okra and make a vertical slit on one side of each okra, without cutting through the other side. Keep them aside.

Stuff the mixture into the okra using a small spoon or your fingers. Keep them aside.
Heat oil in a pan and add cumin seeds, ginger paste, garlic paste. Cook for a 2 to 3 minutes then add 2 medium chopped tomatoes. Mix well and cover the pain for 2 to three minute.
Add turmeric powder, coriander powder, crushed red chili, and salt. Mix well and cook for a minute or 2.
Add the stuffed okra and stir gently so that the masala coats the okra well. Cover the pan with a lid and cook on medium heat for 6-8 minutes, stirring occasionally.
Once the okra is cooked through and tender, sprinkle chopped green chili.
Garnish with chopped coriander leaves and serve hot with roti or rice.
