Ingredients: 

  • 1 cup (140 gram) vermicelli noodles
  • 1 medium-sized potatoes, peeled and diced
  • 1 onion, medium chopped
  • 1-2 green chilies, chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil
  • 1 and 1/2 cups water

Chopped fresh green coriander for garnish (optional)

Instructions: 

Cook vermicelli for 2 to 3 minute to change its colour. Add oil in a pane and add chopped onions and sauté until the onions turn golden brown.

Add diced potatoes and cook for a few minutes until they are partially cooked.

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another minute.

Add 2 cups of water and bring it to a boil.

Add the vermicelli noodles and stir well. Reduce the heat to low and cover the pan with a lid.

Cook for about 4-5 minutes or until the noodles are cooked and the water has been absorbed.

Turn off the heat and let the aloo seviyan sit for a few minutes before serving.

Garnish with chopped coriander and green chilli and serve hot.
